First Course
Asparagus frisée, shaved fennel, shallots, soft cooked egg, surryano ham
Sparkling Rose On the nose, red fruits of strawberry, sour cherries are accompanied by notes of freshly baked bread. Flavors of red fruits give way to a tangy lemon lime and salinity on the palate. Good, long (20+ second) finish with a nice yeasty characteristic.
Second Course
Wild Striped Bass, blue crab rice, spring onion, smoked crab bisque
2018 Chardonnay Medium to full bodied This wine did not undergo malolactic fermentation and therefore does not show excessive “buttery” taste. Aroma of fresh lime and Meyer lemon with flavors of apple, apricot, honeysuckle and guava. Smooth, spicy finish.
Third Course
Marinated Grilled Hanger Steak, nixtamalized corn, nasturtium chimichurri, fava bean succotash
2018 Chambourcin Light-Medium bodied. Aromas of blueberry and strawberry with a subtle touch of herbs. The mouthfeel is smooth and soft, with vibrant flavors of red fruit (Strawberries and Cherries) up front and a subtle spiciness on the finish. The oak aging imparts gentle chocolate and vanilla notes on the finish.
